This week’s meatless
Monday, I started off with my usual and simple bowl of cereal and my peanut
butter and nutella sandwich for breakfast. My roommate and I didn’t have enough
time to go grocery shopping over the past week since we have been quite busy
studying for exams and working on projects. After taking my exam yesterday, I
came home looking for something to make but it was such a hard decision for me
but I eventually decided to make the same dandan noodles that I had about 2
weeks ago since it was all I had left. There wasn’t much to add in the dish for
variety so all I had other than the noodles was kimchi which is a traditional
Korean side dish made up of fermented vegetables and seasonings. My lunch was
able to make me full for only about 2-3 hours. For snacks, I had a banana and
some chex mix. Dinner came along and my roommate made a Korean dish called
soondubu jigae which is translated to spicy soft tofu stew. Here is the link if

ReplyDeleteI am glad to read you had the will to continue to participate in the meatless Monday this week. This week, I also struggled with what to eat since there were not many ingredients and I haven’t gone grocery shopping over the past week either. However, in the end of the day we both were able to have delicious vegetarian meals. I love peanut butter and nutella sandwich! Sometimes my brother puts banana slices inside the peanut butter and nutella sandwich. I usually make a simple peanut butter and nutella sandwich and grab yogurt and fruit to have for lunch at school. I hope you did well on your exam and projects! It is usually tough to make time to grab grocery when you are trying to balance studying, working on projects, and going to class. Also, I think the soondubu jigae which dish sounds delicious! I remember when I used to dorm in freshman year; I used to just crave for some home-cooked meals instead of campus food. Thanks for the link to the recipe! Hopefully I get the chance to try to make it in the future or find a Korean restaurant nearby that serve this dish. I think it was nice that you and your roommate spent time to cook this dish together. I believe support from others makes participating in meatless Mondays more easy and fun.
