Lunch: sushi vegetable roll
Dinner: veggie burger and baked

This week was very difficult to do
meatless Monday. I had two tests on Tuesday so I spent most of my day on campus
and studying, so I did not have time to cook or plan anything out. I’m sure if
I really thought about it I could have planned for meatless Monday over the
weekend but I was also studying and working. I was able to eat something not on
campus for dinner, but it was the same veggie burger I had a few weeks ago. I’m
really going to try for the last meatless Monday to plan a whole day of meals.
Also this week I am going to try to incorporate less meat into my meals. I’m
having dinner with a friend that is a vegetarian so I’m going to try some of
her soy products and other meals.

ReplyDeleteI agree with you that this week was quite difficult to do meatless Monday as I was busy studying for 2 exams too. I am sure you would've been able to plan some delicious meals if you weren't busy studying! Also, I hope to make the last meatless Monday a little bit more exciting by making a meal I haven't made before. I personally think soy products are tasty and I hope you enjoyed it during your dinner with your friend. Best of luck to you!
