Yesterday was the first day of Meatless Monday, and I will be the first to admit that I was not looking forward to this day. My Mondays are one of the busiest days of my week, and the easiest things for me to take along with me usually include some sort of meat product with them, so I was extremely nervous to see how it was going to impact my day not having any meat. For breakfast, I started simply and ate a bowl of cereal with milk. Then for lunch I was able to get home to cook a bit, so I made a few frozen white cheddar pierogis fried with olive oil with an onion diced up. It was delicious, and it filled me right up. Dinner was where my trouble hit in. I normally pack the leftovers from my Sunday night dinner to bring to work with me, but I had made chicken and rice so I was unable to bring that. A friend had told me a few days prior that she would make dinner for me once I was done with work as I was going to her house anyways, so I simply did not pack anything to eat for dinner. Once I arrived at her house, I awkwardly realized that she had forgotten about telling me she would do this, so after working and hanging out with friends, I was finally able to eat “dinner” of a bowl of cereal at 10:45 at night once I arrived home. The beginning of the day went well, but the end did not while going meatless this past Monday.

            I have come to realize with what happened yesterday that I need to make my dinner meatless on Sunday as well so that I have a good meal option to bring with me on Mondays once I get to work. This will also make it easier to have more fun cooking meatless meals as I always seem to have more time to cook on Sundays as I have no time whatsoever on Mondays to cook my meals. I am extremely interested in seeing how this works out for me, and I plan to go shopping for food this week and hope to look at recipes for meatless meals before I go so that I can do a better job this coming Monday at eating well along with eating meatless.

    I was feeling the same way you were with meatless Mondays since somehow my meals always has some kind of meat in it, except breakfast. I honestly did not know how I was going to get through the day. I really like what you had for lunch. I've heard of pierogis before but I didn't know what it actually was. I decided to look it up and I'm really glad I did because they look so good! I think I might pick some up when I go grocery shopping! Also, I'm sorry to hear about the awkward situation with your friend for dinner. I hope that your next meatless Monday will turn out smoothly and thanks for mentioning about the pierogis!
