This
week was the first meatless Monday I have done for the very first time and
unfortunately, I have to admit that I did struggle a lot deciding what to make
for my meals. The reason being is that I wasn’t prepared with much food since I
haven’t been able to go to Wegman’s prior to doing meatless Mondays. My food options
were limited and going grocery shopping can be difficult for me especially
because I live on campus and I do not own a car. For breakfast, I usually have a bowl of cereal and
afterwards, I drink a cup of water before heading out to class. For lunch, I
came home from my first class and that was the beginning of my struggles on
deciding what to eat based on what I already have in my fridge and cabinet.
Eventually, I decided on eating macaroni elbows and I put in a bit of vegetable
stock in the water as I boiled the macaronis to make a soup base and then I
also added some lettuce and an egg to top it off. For snacks, I ate a pack of
crackers before I left for my night class. Afterwards, I came home and one of
my roommates was in the middle of cooking dinner. She made congee which is a
type of rice porridge popular in Asian countries and so I decided to join her
since I haven’t eaten congee in a while. In the congee were frozen corn
niblets, an egg, shiitake mushrooms, and scallions. My roommate had steak on
the side but I didn’t eat it, though it was tempting.
I think my lunch would be the meal that was most affected because I didn’t have much options to choose from since I haven’t been able to go grocery shopping. Normally when I do go shopping, I feel that I spend more money but if I were to skip out on getting the junk food and meat, I would probably be spending less money.
As a result of my first time experiencing meatless Monday, I realized that I don’t eat as much when I have to cook on my own. I think the reason could be that I don’t have as much money to buy variety of food and I don’t have much time to cook. I hope next week’s meatless Monday will be better than this week in terms of what I choose to eat. Other than that, the experience has been quite interesting so far.

ReplyDeleteI could defiantly could understand how if could of been hard to go meatless without of going grocery shopping. I thought about it late Sunday night but if i had not of gone, I would of struggled much more to not eat meat through out the day. I would of not of been able to eat only what you did and be full all day. Also, living on campus without of car really does limit you on the type of food you can get without meat as well as restricting what you can cook. I will need to plan ahead better myself so I have options myself as well as time to cook. I think that will help with the weeks to come!
Tim Hortons, I do believe, has options for breakfast sandwiches that do not have meat in them if that helps for the future! I know the yogurt they have with fruit and granola is good and a high source of protein to help keep you full. Also there are a few different cereal brands that are high in protein that might be more filling for you as well.
There are a few sources online that I found for recipes that are meat less that did not require too many ingredients. Also there are many sources just for college students since most of us are on a little tighter budget! I think with a little research its possible to find recipes for meals that are not too expensive! I hope that helps!
