This first week of meatless Monday
wasn’t very difficult to not eat meat. Usually on Monday’s I have an internship
all day but it got cancelled so I was able to sleep in and not worry about
eating breakfast. For lunch, I met my friends for a late lunch at a Japanese
restaurant where I ate vegetable hibachi. I definitely felt full after eating
since they give you so much food. It wasn’t very difficult to not chose to eat
chicken or steak hibachi instead of the vegetable. This late lunch kept me full
until much later in the day where I just ate vegetable soup from a can. I was
running a bunch of errands earlier and didn’t have time to plan a better dinner
and I was mostly full from lunch.
Meatless
Monday is going to impact the other days of my week by just eating more
vegetables. I went grocery-shopping Monday and bought a bunch of fruits and
vegetables and meals that don’t include meat. So far for Tuesday the only meat
I’m planning on eating is at dinner. It would be nice to think of other through
out the week meals to not eat meat at so I have more ideas for Monday meals.
I’ve
realized overall I don’t eat a lot of meat while here at school. I’ll usually
just eat chicken, not red meat. Usually I only have one meal a day with meat in
it, sometimes I will eat meat at lunch and dinner. So I didn’t think meatless
Monday was a difficult task .

ReplyDeleteI definitely think it's interesting how you realized how much meat you actually don't eat when you really think about it and how easy it is to incorporate vegetables and fruits into your diet when you're being more conscious of your selections. I can completely relate to the days where you sleep in and don't eat breakfast. Do you think that might change as you continue with meatless Mondays and want to incorporate different foods in your diet by adding them to other meals like breakfast? You said you usually eat chicken instead of red meat. Is that because of taste preference or because of other reasons such as certain nutrition factors? For example, red meat that has a lot of fat on it would probably have a higher fat content than a chicken breast. Hopefully, you are making sure you are having enough protein in your daily diet which I know is very possible with other foods other than red meat. It really is kind of difficult to keep up with healthy eating and making your own food while away at college and have limited cooking space, time, and resources. But it sounds like you’re doing a good job and Meatless Monday has made you more aware of your choices. Hibachi restaurants usually have lots of vegetables to choose from so that sounds like it worked in your favor and hopefully you can continue to visit places like that!
Overall, I think you did a good job and good luck with future meatless Mondays!
