I enjoyed this week meatless Monday very much. For breakfast, I ordered hot tea with milk
and sugar, toasted everything bagel with butter, and a chocolate chip muffin.
For lunch, I boiled and mashed two sweet potatoes. Sweet potatoes have so many
health benefits, like having a good source of vitamin D and vitamin C. I just
found out that sweet potatoes also contain iron, which is great for red and
white blood cell production and potassium, which helps regulate heartbeat.
Lastly, dinner I made congee. Congee is a type of rice porridge cooked in many
Asian cultures. It is easy to make and
digest!
Since I made leftover congee I was able to eat some for
breakfast. I notice that this week meatless Monday has been getting easier and
easier. Its was easy because I planned what to eat on Sunday. Again I do feel
healthier doing the meatless Monday. Felt healthier during my lunch and
dinnertime. It was great not eating anything fried or food loaded with sugar.
For this meatless Monday, I didn’t spend a lot of money. I spent probably
around $8. I was curious about the nutritional content of sweet potatoes so I
used the website below to find out. I love this website because you can enter
any food and it would show you the nutrition facts. My roommate loved the
congee and sweet potatoes I made. She also felt healthier eating those meals.
Overall, I enjoyed this week meatless Monday.
