This week’s meatless Monday I kept my meals quite simple. To start of my day, I had a bowl of cereal and a banana for breakfast. After my first class, I went back home and I baked a wheat pie that had green onions inside as filling. It was already pre-made so all I had to do was just bake it for about 15 minutes. It was my first time eating it and I thought it was pretty delicious. Unfortunately, it didn’t really fill me up so I had to make a peanut butter and nutella sandwich afterwards. Around snack time, I had a pack of crackers and some organic vanilla flavored milk. When it was around dinner time, I started to feel slightly uncomfortable and sick so I skipped my night class and made a small bowl of pasta with an egg on the side.
              I think my lunch was the most affected meal because I was expecting the wheat pie to fill me up but I didn’t realize how small and thin the pie was. I also didn’t spend much money this week because I still had a fair amount of groceries left but for the things I did buy, I spent a lot less just because I made a deal with my roommate to stop buying junk food until we finish what we already have at home. Overall, this week’s meatless Monday was average for me and hopefully, next week will be a little bit more interesting.

    I never heard of a baked pie with onions as a filling. That is definitely something I may have to consider trying. At first I thought it was what we Hondurans call a pupusa which is a corn tortilla stuffed with cheese and peppers. It looks exactly the same. Due to the lack of protein sometimes I sometimes don't feel full after a meal during meatless Mondays. So I understand your struggle. It was interesting that you would mix peanut butter and nutella! I love them separately I never tried them together. I may have to use that new recipe as a snack later on today. I usually eat a nutella sandwich with bananas or strawberries. Coming to an agreement with your roommate about not buying any more junk food until the food in your house is finished is a great way of saving. My roommate and I have that problem sometimes. We buy more than what we use. Sometimes our groceries end up going to waste because we don't eat that much during the weekdays because we are busy running around. Well, I wish you the best in the next few meatless Mondays.
