Meatless Monday went better than usual, was actually a good day. For breakfast I had waffles with a parfait and apple juice on the side. Was very delightful and healthy.  Gave me the energy I needed to go on with my day. I was running early that morning so I left my house early and got to school earlier than usually. But ended up getting to my class late because I couldn’t find parking.  I was looking for parking for at least 15 minutes; it was terrible. For lunch I had ate a grilled cheese sandwich with a salad and pink lemonade to drink.  That meal impacted me the most because I wasn’t fulfilled by it. So during the middle of my 6pm-840pm class my stomach was growling and I was hungry. For dinner I had something new which was 3 bean soup. Wasn’t what I accepted , it was way better than I imagine. Had that with whole wheat fresh bread from Wegmans and homemade butter.

    It sounds like Monday was a great day for you. First of all, I really love yogurt parfaits. They're so delicious, Of course the day you're early, there's no parking. I hate parking at UB so i feel your pain. Grilled cheese is usually my go-to meatless meal since it's so easy and only requires cheese and bread. I usually have tomato soup with it. Maybe if you have something additional with the sandwich and salad next time, it will fill you up better, I'm not sure what, but maybe some fruit would help. I usually bring apple slices with peanut butter with me to snack on in case I get hungry. The 3 bean soup sounds pretty interesting! it looks like re-fried beans and I do not like re-fried beans because of the mushy texture they have, so I'm not sure if I would like the 3 bean soup. Good job trying something new. Overall, it seems like you had a fantastic week. Good luck next week!
