Meatless Monday
started pretty early for me this week. I woke up around 7:30 in the morning to
prep myself for an exam I had later in the day. For breakfast I consumed a bowl
of oatmeal with strawberries and bananas. This meal was completely enjoyable
because it was blended with a variety of colors and flavors. The fact that I
was studying for majority of the day I found myself getting hungry not to long
after. Following my morning classes I
stopped at Capen café and bought a French Vanilla coffee with an everything
bagel and vegetable cream cheese. This meal was very convenient because I was
able to grab it and go. Before my exams I usually consume a banana which is supposed
to reduce anxiety but also just to have something in my stomach so I didn’t feel
sick. Once I got home I took a nap
because I was super exhausted. When I got up I watched a little TV and then
started prepping for dinner. Dinner was composed of alfredo linguine pasta with
broccoli and extra parmesan cheese. The fact that I made the alfredo sauce from
scratch made it 10x better. I found the recipe for the alfredo sauce on
Pinterest, I included my own twist and added jerk seasoning. The meal that was
mostly affected on Monday was dinner. It was odd for me to consume pasta
without chicken and/or shrimp. Not eating meat on Monday had me craving it for
the rest of the week. For breakfast on Tuesday I ate over hard eggs with
American cheese, BACON, and toast. I
spent a little more money on groceries used in the ingredients of the sauce. These
ingredients included heavy cream, butter, parsley, Grace jerk seasoning, fresh
parmesan cheese and Mrs. Dash seasoning. My roommates did not fully partake in
meatless Monday this week with me, but they did eat the pasta. My weekly
experiences of being meatless on Mondays gives me the opportunity to explore
different vegetables as well as meatless combinations.
