For this meatless Monday I was kind of watching my calories because I’m going on vacation. For breakfast I had a fruits salad with bananas, grapes and strawberry. I cut it up the night before and just took it on the road to go. For lunch I had sweet potato fries and kale salad. I really love kale now it's way better than lettuce. For dinner I had zucchini pasta. I the meal that was the most effective was dinner the pasta was pretty great. This did not affect my week as much as no carbs doing both is really death. I don't know what I was thinking. Eating no carbs are far more worst then going meatless because I never felt full. I was always still hungry. My observations this week were, eating just fruits and veggies are not for me I need more in my meals. I didn't spend a lot of money because fruits and veggies are only a few dollars. The people around me thought I was brave for doing both. I didn't find much on the web for no carbs and meat meals. As the weeks go on I just find meatless Monday to be easier and easier. I will not go as far and say I love it or I can do it all the time but I do understand why we need to do it. If everyone did this we would live in such a healthier world. So I will keep trying to do a meatless day every week .

ReplyDeleteRight before spring break I did the same thing by trying to eat less cards since I was also going on vacation. It was horrible for me as well, no carbs or no protein does not work. I found that on Tuesday when I still limited my carbs but was able to have more protein it was better. I think if we both included may eggs, yogurt with the fruit or other vegetable or gain proteins we would of both been better off than just straight carbs.
You dinner sounded amazing though. I have always wanted to try and make zucchini pasta but I have never gone out and bought the tool need in order to make the zucchini into pasta strings. Maybe, adding more to the zucchini pasta other than red sauce would also help keep you more full. I have found recipes that call for tofu or if it was not a meatless Monday, ground turkey or meatballs to add more protein.
Also, it really surprised me that you actually spent less money just eating fresh fruits and vegetables. I feel like fresh fruits and vegetables this time of year especially are much more money since most are shipped in from warmer states since they aren't in season here now. I tend to also buy frozen fruits or berries this time of year because they are usually cheaper and perfect for smoothies!
