This week’s
Meatless Monday went much better than previous weeks as I was able to prepare
on Sunday a bit more than previously. I was able to cook up some brown rice and
vegetables the night before so I had a meal to bring to work, which is what is
usually the problem with eating meatless on my Mondays.
For breakfast I ate my usual quick
bowl of cereal with milk and a cup of coffee, and for lunch I was able to bring
a pasta salad that I had made on Friday that was still left over. This salad was extremely delicious as it
contained pastini, grape tomatoes, and feta cheese. With no dressing, I did not
feel guilty eating pasta, which I normally feel with I eat pasta. I have begun
to realize how important pasta is in my training for the half marathon, so I
will be eating more of it while also attempting to eat it in healthy ways.
For dinner at work I was able to
bring brown rice mixed with a handful of different vegetables that I prepared
the night before. These vegetables included carrots, green beans, corn, and
peas. This mix was delicious, quick to heat up at work, and very filling. It
was also a cheap meal for me to make and prepare the night before. I spent the
most money on lunch as the feta cheese was a bit expensive, but I would remake
that salad any day as it was extremely delicious.
For future weeks, I hope to find
more easy recipes to make Sundays so that it is easier for me to take with me
to school and to work on Mondays. Even though I wish I could explore Meatless
Mondays more with having the time to cook and eat that same day, I am finally
coming to explore how to do this the night before, which is a huge change since
the very first day that I participated in this program.
