This week I ate:
            Breakfast- yogurt
            Lunch- apple with peanut butter and wheat toast with avocado
            Dinner- rice, black beans, tomato, lettuce, cheese

This week I almost forgot it was ‘meatless Monday’ so I didn’t really prep or buy foods a head of time. The only meal I actually made was lunch this day. Breakfast wasn’t really breakfast because I slept late so I just ate the yogurt when I woke up a little bit before lunch.
            Usually dinner is my most affected meal, but this week I went to campus around dinnertime so I got a rice bowl from Moe’s without any meat. It was pretty easy to avoid eating meat on campus for dinner since there were so many options around.

            Next week I’m going to try to buy food over the weekend so Monday I’ll have more options at home to make. I think my problem this week was just bad planning.

  1. Don’t feel bad I forget about meatless Monday every week. I wish I was like every week every other week. I am on a health kick so I always try to have fruits and veggies around my house. One because I don’t like them so if I don’t make myself eat them. I will go without eating them. So I really am trying to be health. What kind of yogurt do you eat? I ask this because I’m looking for a good yogurt. I am very picky. I like upstate but they do not sale here in the supermarket. So I am on the hunt. I want to try some Greek yogurt but I don’t really like the way it looks but I hear it’s really good. I have to agree with you I find it very easy to get meatless dishes on campus. For most I get salads or pasta. I like your picture I love fruits with dip. Have you tried Camel dip with fruit its super good or chocolate even better.

  2. you should try adding tomato, cilantro, or dill weed to your avocado toast. and/or garlic if you like fresh garlic mince it and fry it quickly to get it a little browned--- I'll pick between the spices whether I'm feeling something fresh or more Italian. Fry an egg and lay it on top and voila, breakfast.
