This meatless Monday was definitely the most productive out of all of them so far. I googled vegetarian dishes and found a whole lot of options. So I picked the first one that I saw. For breakfast, I made scrambled eggs over asparagus. It definitely sounded like something I’ve never tried before. I’ve had both asparagus and scrambled eggs but never together so I figured I should try it out. I made the asparagus in the oven and the eggs with butter on the frying pan and then just took the asparagus out and put the eggs right over it. It was so simple and a really easy way to get my veggies in a dish that normally would have just been eggs before. For a snack at around 1pm, I decided to munch on some carrots and have cranberry juice (that I have found a new love for recently). I had lunch around 2pm when class was over. It was pretty simple—I made a spinach salad and put clementine in it. It wasn’t from a recipe and I usually never put fruit in my salad (it’s a bit of a taboo for me), but I figured I’d try it out. It was alright. It wasn’t amazing, but gave me enough food for the rest of the day. I didn’t eat again until around 9pm and I made myself broccoli and spinach on a naan bread then baked it and that turned out really great. As for people’s reactions, I didn’t cook or eat in front of anyone that day so I don’t have anyone’s reactions. It surprisingly didn’t cost me much more than usual; it really just took up more time and energy on my part which wasn’t a bad thing, but it was a good thing I planned ahead for the meals or else I wouldn’t have been able to make them or shop for them in advance.
Overall, it was a successful meatless Monday! I couldn’t really say that for the previous ones so I’m glad I made the best out of this one. I’m feeling good about the decisions I made regarding what I ate and it’s impacting what I buy in the store and what I choose to make time for.
