This Monday was even tougher for me
to stay meatless. Again, I was travel back from another trip and airports/fast
food restaurants do not have many options for meals that are meatless and that
will keep you full for a decent price. For breakfast I ate steal cut oatmeal
with fresh blueberries, mixed nuts, and honey from Starbucks along with a cup
of coffee with soymilk. This surprisingly filled me up for awhile and I loved
the fresh blueberries. Lunch was defiantly my most affected meal due to the
fact that I was traveling. For lunch, my choices were limited to the few option
within the terminal. I just ordered a milkshake and French fries. It certainly wasn’t
the healthiest choice but at the same time it satisfied my sweet tooth for the
time being. For a snack I had a Kind granola bar and an apple that I picked up
at convenience store in the airport. Next for dinner I was finally able to
prepare a meal after going to the grocery store. I picked up stuff to make
eggplant pram but unfortunately when I got home I realized that I forgot to get
sauce so I had to improvise. I found a recipe to just bread slices of roasted
eggplant and it came out pretty good. With the breaded eggplant I also roasted
brussel sprouts and brown rice. This meal was much more filling than the
milkshake and French fries I had for lunch. Unfortunately, I wasn’t thrilled
with the breaded eggplant. Eggplant pram would have been much better since the
plain breaded eggplant was pretty bland for the amount of steps and time that
was required to make them.
For this Monday, I do actually
think that I spent more money than I normally would have to to stay meatless
due to the fact that I was traveling. I was able to see a difference in how I
felt after consuming the junk for lunch in comparison to the healthier food I
was able to make for dinner. I think that it makes a big difference if you are
able to make your own food rather than buying prepared foods or eating out
frequently. This way you are able to know exactly what is going into your food,
how it is prepared and what it is prepared with. Also it would have been better
for me while traveling if I was able to bring either more snack or if I had
more time in the airport to search for healthier options. Of course after
landing we ate at the first spot we saw. Then after eating while walking to our
gate we passed a smoothie store as well as a store that carried a variety of
salads, which would of clearly been a better option even though they cost much
more. Additionally, I was traveling with four other people. That made it more
difficult to stay meatless and eat healthier because I did not want to be a
burden to them by searching for different food options when they were will and
able to eat anything.
I totally feel your pain when it comes to trying to eat meatless while traveling. not only eating meatless but just eating healthy in general. I drove 21 hours down to Florida and back and every time we stopped for gas or a bathroom break the only food options were either arby's, subway, or some other form of a fast food joint. We brought snacks for the drive which I thought would solve that problem but they only lasted the first 5 hours into the trip. Especially when everyone else I was with was ordering burgers, chicken sandwiches, etc. and I'm over here trying not to cave and pick the healthiest thing possible (but even that was limited to trail mix or single fruit not an actual meal). I'm glad you stuck it out though traveling makes staying on track with your meals extremely challenging to do even if you pack food beforehand you never know where you're going to be or where you might be dining later on. I'm glad you tried Brussels sprouts though; I don't know if you've never had them or what but I think they have a bad rep because they are delicious if you know how to cook them in addition to the nutritional benefits. But, if you want to try making the eggplant parmesan again when you can get all the right ingredients here's a couple links for some good recipes that I've tried myself and it came out pretty good.
